Candied Yam Cupcakes

I discovered this recipe last night when looking for
something yummy made with yams.
Don't worry, it's an Honors English
extra credit thing.
They are actually pretty good!
Candied Yam Cupcakes

Makes 24
Ingredients:
1 pound yams, peeled and cubed
4 eggs
1 cup canola oil
1 cup white sugar
1 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon salt
3 ounces cream cheese, room temperature
1/2 cup butter, softened
1 teaspoon vanilla
2 cups powdered sugar
1) Place a steamer insert into a large saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the yams, recover, and steam until very tender, about 15 minutes. Remove yams from steamer and allow to cool slightly.
2) Preheat oven to 350 degrees. Line cupcake tins with paper liners.
3) Place eggs, oil, sugar, vanilla and cooked yams in a large bowl; beat with an electric mixer until light and fluffy. Sift together flour, bakig powder, baking soda, cinnamon, and salt. Stir dry ingredients into yam mixture, mixing jut until combined. Spoon batter into paper liners, filling 2/3 full.
4) Bake 17- 20 minutes, check with a toothpick. Cool for 5 minutes, transfer to a wire rack to cool completely.
5) Beat together cream cheese and butter until fluffy. Beat in the vanilla and powdered sugar; mix until smooth. Frost cool cupcakes with cream cheese frosting.

  1. This year I discovered canned yams. They would probably make this a super easy cupcake recepie since you wouldn't have to steam the yams yourself. I think the ones I found were in syrup though, so you would have to reduce the sugar. Maybe I will try it and tell you how it goes.

  2. Eric said he's been getting lots of compliments on the cupcakes, even a few days later! I think the cream cheese frosting is what makes them so yummy! I just can't bring myself to buy the canned yams. They're not that bad, but the fresh ones are soooo yummy. Hmm, maybe I'll steam some for dinner tonight. The boys will be so thrilled. NOT.
